Probably a little game called 'where has boomboom gone'. Which basically involves my work wondering what's happened to me for 3 days, until eventually they receive an email informing them I have moved to Mexico with as much of the 'unlimited resources' as I could fit in 2 suitcases and a rucksack....

The ultimate FPS/RPG Online game called "RealLife". Dying in game also spells death for the player.
Planet of Peacecraft
An offline non-MMO where you start at 70th level with full epic gear and the more you play the lower level you become, and anyone who goes near a 'raid' gets a big text message onscreen "You sad git go get a life and pay some attention to your forgotten girlfriend".
I'd then give it the same icon as WoW and install it on my partners computer.
Maybe then i'd get some attention instead of coming here to read threads about "If you where a computer game programmer [which I am] what would you write?"...
Oh the bitter irony.

I have no idea, when I work my way up to an unlimited budget I'll let you know. For the time being I'm having fun working within my own constraints and still making whatever I want.
I'd be making the game I'm making. I would just be doing a lot less of the art and level design myself.
I'd also be making the same game and I would buy a Mad Max interceptor replica and give money to family members.
I would make a 'game' that fixes the economy ;P

A big sandbox RPG game i think - but not orcs and bloody elves! Something original.
A game where the player can get ahead without combat - i.e if you want to advance via combat you can, but there's other more constructive avenues as well - say, city planning or taking photos for the local paper - something other than just get a bigger gun and more outlandish armour and kill more stuff to advance.
A couple of million and 2-3 years to develop.
Then tease the punters with endless previews and exclusive hands-ons. Get everyone excited, even announce a tentative release date.
Then announce it's PC only and make posts on console sites insinuating console fanbois aren't smart enough to appreciate the deep gameplay. Make sure to accompany such posts with high-res headshot screenies so they know exactly what they're missing out on.
Laugh at the console fanbois repeatedly.
Then cancel the PC release as well ;-)

But here's what I would do, WWI: War to End All Wars, a high production FPS.
Ok so you respawn in a trench and you know where the enemy trench is, so you jump out of your trench to go kill the other players, but you are mowed down my machine guns and trip on barbed wire.
Ok so running out of the trench doesn't work... I'll try SNIPING!! But you quickly find out there's no one to see from the trench and climbing out means certain death. So much for high kill to death ratios!
Ok so I'll just sit in the trench. This is where the game gets interesting: four things can happen to you at this point:
- an NPC officer comes up and demands you leave the trench to fight. If you leave, you get the same old same old, if you stay, he blows your head off with a pistol for disobeying orders. If you try to kill him, you are shipped off to a mental facility where you die.
-Mustard Gas. Oh no! Press B to put your gas mask on. Oh wait, there's only a 50% chance it will actually work. Well, there goes my lungs...
-Shell Shower. Holy cow, dodge the shells! Oh good I lived although half of my team got blown to smitherines. If the bunker doesn't collase on me, I still have a 70% chance of shell shock where I'm immobile and insane for the rest of the map.
-Disease. Got to love trench foot! Slows you down 65%. Or there's just the spontaneous 'go crazy' mode where you lose it entirely, where you're shipped off to an insane asylum.
Other cool features:
-If you get shot, you get shot. No re-heal, shield, or that. Stomach gets you 30 seconds to live, legs make you move slow, arms lower firing rate, and everyone's favorite: HEADSHOTS!!
-When you die, you die. There is no "respawn". Just a lot of writhing around among your other dead comrades in the muck.
-Trench digging mini game: like Dig-Dug but with tanks and mustard gas.
And then after a day or two everyone will quit playing and realize: "Hey, war isn't very much fun, is it?"
Then I'll rename it WWI: FPS to end all FPS's.

If I had unlimited resources I think I would hire lots and lots of artists and create some kind of barrier-dissolving world-peace-encouraging kind of creative virtual world thing. Or something. :-)

Hehe, nice ideas. I would go with Gab. Do the game i'm doing, but have artists shower me with 3d models and textures and great sound tracks.
I wouldn't make a game.
I'd spend it on beer, women and fast cars. Then I'd just squander the rest.

A space exploration Elite style game
I'd fund the creation of some sort of interactive fiction thingy in 3d. It'd be long on story, plot, and characterisation and short on popular gameplay mechanics. It would be designed to appeal to both the emotions and the intellect, thereby rendering it impenetrable and confusing to most people. It'd have the very best production values. I'd employ the services of the leading philosophers, psychologists, fiction writers, AI experts, and programmers of the time to devise the underlying theories and the ways in which they might be tested.
It would be a digital folly - something that I paid to have created simply because I was filthy rich and could. It would be glorious, extremely expensive to produce, and an utter commercial failure.

I would have to agree with justluke's idea. I would make some kind of game that once you started playing it, it snuck into your mind phsycologicaly and I would pay some experts in phsycology to help me. I would also hire a whole team of programmers and experts of every field I needed to help me.
Once the first one started eating away at your mind I would have another game, a continuation of my previous one, that would continue to turn people into zombies :)

build a holodeck and create blitzholo for programing it.
I'd probably just buy a remote cottage near some isolated beach, get some cheap ass internet and spend most of the time oil painting and playing with my dogs. Not bother with games and computers much at all except to stay in touch and order stuff online, assumping UPS and Fedex deliver.

An elite style game but with an fps element to it IE. board the ship you have just disabled and fight your way to the booty and I want to walk around the spacestations and planets. Multiplayer as well of course.
When I heard about Spore a while back (few years), I had great expectations. I tought that creating your own planet, cities, and economics would be the ultimate in mmorpg. But Spore became a lot less mature than I have expected. I truely seems to be aimed for the kids. It is much less interesting than I wished for as the tools to make your cities are very limited. The economics system is also very limited. It's probably complex enough for kids but for adults, the comical characters and the "fisher price" style of building blocks really tones down the whole experience. It's still fun to play, but truely toyish and limited.
Ultimately, I would make a Spore type game, but much more mature, have an economical system that comes closer to reality on a per city basis. My Spore game would enable mining planets for minerals. It would let your research team study on a budget basis. Population would grow, cities would expand as well. Population could migrate by themselves to other planets if for a better quality of life.
