It's a cool site, but I don't understand what is to stop anyone from going in and deleting all the articles, or replacing all the images. Does the site make a backup every time it changes?

Whenever someone makes an edit, it's put on top of a stack of edits to that page. If someone comes along and notices that the most recent edit vandalized the page, all they have to do is revert back to the previous version of the article. (See the "History" tab on any Wikipedia page for a list of edits.) That makes for a massive amount of data, which is why database dumps of Wikipedia are no less than 20 GB worth of SQL code.

As far as i know yes, there are loads of backups.

edit; 34 seconds late... heh

Wikipedia is great!

I can spend hours there, reading random articles.

I almsot got banned though for making an article on a friend in retalion for him doing the same for me. It was rather interesting :p

Yep, every change you make is recorded and its not too hard to revert. The community is large and usually catches any vandalism.

As for deleting articles, to actually delete an article you need some privileges. Sure you can clear an article of all contents, but its history remains. If you are a moderator of some kind you can actually delete articles. This is if people create articles out of the scope of the encyclopedia or if there are duplicate articles and the other article was chosen as teh best name.
